Canadian durum wheat makes up approximately 50% off all international  durum sales.  It is the fourth most widely produced Canadian grain.  Canadian farmers grow the highest quality durum in the world because of our ideal soil conditions and climate.  Semolina flour, made from durum wheat is highly desired for pasta because it does not become sticky or overly soft when it is cooked (el dente!).   Durum wheat gives pasta ideal gluten strength and protein content.
